Growing up, Casper was one of those movies that I could totally watch over and over again. I’m not ashamed to admit that I had a major crush on Devon Sawa, who played the live version of Casper. I also have a sneaky suspicion that my husband had a crush on Christina Ricci, so this date night movie choice was an awesome blast from the past for both of us. For this week’s Casper Movie Night, I wanted to channel that childhood nostalgia and take a break from the elaborate meals I’ve been creating, opting for something easy and timeless—enter: breakfast for dinner!
I gave the movie a rewatch before date night to jog my creativity, and when Casper makes breakfast for Kat in the movie, I just knew that was what we had to make. Inspired by the scene where Casper offers Kat fresh-squeezed orange juice, I decided to give it a grown-up twist—a Fresh-Squeezed Orange Juice Mimosa. For a cute little finish, I garnished it with a lemon peel ghost. It was the perfect little drink to set the mood for an awesome night.

The eggs added that playful, friendly ghost vibe, tying everything in perfectly with our Casper Movie Night theme.
